Enzyme Lab Experiment Your apple company is in the business of making and selling apple juice. In order to increase profits the company would like to experiment with different enzymes to see if they can speed up juice production. Your job is to investigate the ability of two isolated enzymes for speed and cost efficiency. Enzyme information Two enzymes, cellulase and pectinase, are available to your company. We know that enzymes speed up reactions but what reaction are these two speeding up? Google what cellulase and pectinase do. Cellulase activity Pectinase activity Pectinase costs $50 and Cellulase costs $100 Based on the cost and the way the enzymes work will pectinase, cellulase, or a half-and-half mixture be best for your company and why? Setting up a plan Your teacher will help you answer these questions as teams in class Question Answer What is the problem you're trying to solve? What are you adding to the apple juice production in order to speed it up? This is known as our Independent Variable since that's what we're changing in the experiment.
