You might dip it in chocolate. churros A Spanish rice dish made with chicken, seafood, or chorizo and the spice saffron. paella An appetizer made of fresh raw fish, citrus juice, chilli peppers and other seasonings. ceviche A fresh, raw type of salsa. pico de gallo A popular rice and bean dish served in Costa Rica and other Central American countries. gallo pinto A Latin American turnover that is baked or fried and usually filled with meats, cheeses or vegetables. empanada A special sauce used in Mexican cooking made of chocolate, chillies and other spices. mole Made from pig skin. Sometimes you can buy them in a bag just like potato chips. chicharrón Cooked guinea pig and a very popular food item in Peru. cuy A traditional Mexican dish made of a dough and steamed in a cork husk. After it's cooked - don't eat the corn husk! tamales Very popular in Spain.
