They are temperature, pH, and substrate concentration. When the temperature is too cold molecules move slow which slows down the reaction. When the temperature is too hot the enzymes loses its shape and becomes denatured. Each enzymes has an optimal pH at which they work best. If the environment is too acid or too basic it will lower the enzyme activity. If enzymes do not have enough substrate to work on the reaction rate will be low. When substrate is added the reaction rate will increase until it reaches the point of saturation when the reaction rate levels off.
